Most of the cost is ground turkey ($7.35) and potatoes ($3.60). With oil, spices and staples already at home, the shop drops to about $15.54. Prices are estimated for the amount used, at average US grocery prices (November 2026).

Steps

  1. Preheat the oven to 375°F (190°C) and line a rimmed baking sheet with foil. Finely chop the onion and mince the garlic.
  2. Beat the egg in a large bowl, then stir in the gluten-free breadcrumbs, onion, garlic, dried oregano, 1 teaspoon of the salt and the black pepper. Add the ground turkey and mix gently with your hands until just combined.
  3. Shape the mixture into a loaf about 9 by 5 inches on the baking sheet and spread the ketchup evenly over the top.
  4. Bake for 50 to 60 minutes until the glaze is set and a thermometer in the center reads 165°F (74°C), with juices running clear.
  5. Meanwhile, peel the potatoes, cut them into chunks and cover with cold water and the remaining salt. Bring to a boil and simmer for 15 to 20 minutes until a knife slides in easily, then drain and mash with the olive oil.
  6. Boil the green beans in a pan of water for 5 to 7 minutes until bright green and tender-crisp, then drain.
  7. Let the meatloaf rest for 10 minutes so it slices cleanly.
  8. Slice the meatloaf and serve with the mashed potatoes and green beans.
