Steps
- Pat the roast dry. Mix the garlic, rosemary, olive oil, kosher salt and black pepper and rub it all over the meat. Leave the roast at room temperature for 1 hour.
- Preheat the oven to 450°F (230°C) and set the roast bone-side down, fat up, in a roasting pan.
- Roast for 20 minutes until the outside is browned and sizzling.
- Lower the oven to 325°F (160°C) and roast for 60 to 75 minutes more, until a thermometer in the center reads 125°F (52°C) for medium-rare, or 135°F (57°C) for medium.
- Lift the roast onto a board, tent loosely with foil and rest for 20 minutes; the temperature climbs about 5°F as it rests.
- Pour off all but 2 tablespoons of fat from the pan. Set it over medium heat, melt the butter, whisk in the flour for 1 minute, then whisk in the beef broth, scraping up the browned bits, and simmer for 2 to 3 minutes until slightly thickened.
- Carve the roast between the bones into thick slices and serve with the jus.
