Steps
- Pat the shrimp thoroughly dry with paper towels to prevent excess moisture from accumulating during cooking.
- In a large microwave-safe baking dish, combine the shrimp, minced garlic, olive oil, salt, and black pepper, tossing until the shrimp are evenly coated, then spread into a single layer.
- Cover the dish loosely with a microwave-safe lid or parchment paper and microwave on high power for 3 minutes, then stir gently.
- Add the thawed frozen peas & carrots and cooked rice to the dish, folding gently to combine with the shrimp and cooking juices.
- Cover again and microwave on high for 3 to 4 minutes, until the rice and vegetables are heated through and the shrimp are fully opaque, pink, and reach an internal temperature of 145°F (63°C).
- Let the dish stand covered for 2 minutes to allow the residual heat to finish steaming the ingredients evenly.
- Fluff the rice and shrimp mixture gently with a fork, season with additional salt and black pepper if desired, and serve hot.
