Steps
- Pat the white fish dry with paper towels and arrange the fillets in an even single layer in a wide microwave-safe dish.
- Distribute the frozen mixed vegetables around the fish fillets, drizzle the olive oil evenly across both fish and vegetables, and season with the salt and black pepper.
- Cover the dish loosely with a microwave-safe plate or vented microwave-safe plastic wrap to trap steam. Microwave on high power for 4 to 5 minutes until steam starts actively circulating and the vegetables begin to soften.
- Carefully pull back the cover to vent, rotate the dish 180 degrees, and microwave on high for another 2 to 3 minutes until the vegetables are tender and the fish is completely opaque, reaching an internal temperature of 145°F (63°C) and flaking easily when tested with a fork.
- Let the dish rest covered for 1 minute, then cut the lemon in half and squeeze the fresh juice over the fish and vegetables.
- Portion the white fish and vegetables onto plates, spooning the flavorful cooking liquid from the bottom of the dish over the top.
