Steps
- Pat the bone-in ham steaks dry with paper towels, then use a sharp knife to make shallow vertical cuts 1 inch apart through the outer fat edge to prevent the steaks from curling during searing.
- In a small measuring cup or bowl, whisk together the pineapple juice, brown sugar, Dijon mustard, clove powder, and black pepper until the sugar is dissolved.
- Melt 1 tablespoon of the unsalted butter in a large skillet over medium-high heat. Add the pineapple rings in a single layer and sear for 2 to 3 minutes per side until lightly browned and caramelized, then transfer them to a plate.
- Add the remaining 1 tablespoon of unsalted butter to the skillet. Place the ham steaks in the skillet (in batches if needed) and sear over medium-high heat for 3 to 4 minutes per side until golden brown and warmed through to an internal temperature of at least 140°F (60°C).
- Reduce heat to medium-low, return all ham steaks to the pan, and place 2 pineapple rings on each steak. Pour the glaze mixture around the ham and simmer for 2 to 3 minutes, spooning the bubbling glaze frequently over the pineapple and meat until the sauce is glossy and lightly syrupy.
- Transfer the glazed ham steaks and pineapple rings to warm plates, spoon any remaining glaze from the skillet over the top, and serve immediately.
