Steps
- Strip the kale leaves from their thick stems and roughly chop them into bite-size pieces. Drain and rinse the white beans, and mince the garlic.
- Heat the olive oil in a large deep skillet over medium-high heat. Add the diced ham and cook for 4 to 5 minutes, stirring occasionally, until the edges are lightly browned and crisp.
- Reduce the heat to medium, add the garlic, and cook for about 1 minute, stirring constantly, until fragrant and pale golden.
- Pour in the chicken broth and stir in the white beans, salt, and black pepper. Bring the liquid to a simmer over medium heat, cooking for 2 to 3 minutes until bubbling gently.
- Add the kale to the skillet in handfuls, tossing until it begins to collapse, then cover and cook over medium-low heat for 4 to 5 minutes until the kale is tender and vibrant green.
- Remove the skillet from the heat and stir in the apple cider vinegar, scraping up any browned bits from the bottom of the pan.
- Divide the warm ham and bean mixture evenly among four shallow bowls and serve hot.
