Steps

  1. Submerge the cedar grilling plank completely in warm water, weighing it down with a heavy bowl or pan, and soak for at least 1 hour.
  2. In a small saucepan over medium-low heat, combine the maple syrup, tamari, minced garlic, lemon zest, kosher salt, and black pepper; simmer for 3 to 4 minutes until slightly thickened into a glossy glaze, then pour half of the glaze into a small serving bowl to reserve for the table.
  3. Preheat your grill to medium heat (around 400°F / 200°C) or preheat the oven to 400°F (200°C) with a rimmed baking sheet ready. Pat the salmon fillets dry with paper towels.
  4. Place the soaked cedar plank directly onto the grill grates or onto the baking sheet in the oven, close the lid or oven door, and preheat the wood for 3 to 5 minutes until it begins to crackle lightly and release fragrant smoke.
  5. Carefully arrange the salmon fillets skin-side down in a single layer on the hot plank, then brush the fish generously with half of the glaze from the saucepan.
  6. Cover the grill or close the oven and cook at 400°F (200°C) for 15 to 20 minutes, brushing with the rest of the cooking glaze at the 10-minute mark, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Carefully transfer the cedar plank with the salmon onto a heatproof board, drizzle with the reserved clean glaze, and serve immediately.
