Steps
- In a small shallow bowl, thoroughly combine the paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, kosher salt, and black pepper.
- Pat the redfish fillets completely dry with paper towels, then brush both sides with half of the melted unsalted butter.
- Press the spice mixture generously and evenly onto both sides of each redfish fillet to form a complete crust.
- Heat a heavy cast-iron skillet over high heat for 5 to 7 minutes until smoking hot; ensure your kitchen is well ventilated.
- Carefully place the redfish fillets in the hot skillet without overlapping, and drizzle 1 teaspoon of the remaining melted unsalted butter over each fillet.
- Sear undisturbed over high heat for 2 to 3 minutes until a dark, blackened crust forms on the bottom.
- Carefully flip the redfish fillets, drizzle with the rest of the melted unsalted butter, and cook for another 2 to 3 minutes until the crust is blackened, the fish flakes easily with a fork, and the internal temperature reaches 145°F (63°C).
- Transfer the blackened redfish fillets to warmed dinner plates and serve immediately with lemon wedges.
