Most of the cost is peppers ($5.81) and minced beef ($2.98). With oil, spices and staples already at home, the shop drops to about $13.26. Prices are estimated for the amount used, at average US grocery prices (November 2026).
Steps
- Halve the peppers lengthwise through the stem and remove the seeds and inner white ribs. Finely chop the onion and mince the garlic clove.
- In a bowl, combine the minced beef, chopped onion, garlic clove, tomato purée, ground cumin, chipotle powder, and salt. Mix thoroughly until the spices and aromatics are evenly distributed throughout the meat.
- Stir the drained sweetcorn and kidney beans into the beef mixture, then spoon the filling evenly into each pepper half.
- Preheat the air fryer to 180°C. Arrange the stuffed pepper halves upright in the basket in a single layer (cook in two batches if your basket cannot hold all eight halves without overlapping) and air-fry at 180°C for 10 minutes.
- Lower the air fryer temperature to 160°C and cook for 5 to 10 minutes more, shielding loosely with aluminium foil if the mince begins to darken excessively, until the peppers are tender and the mince registers at least 71°C with no pink remaining.
- Transfer the hot stuffed peppers to plates and serve with the tortilla chips, guacamole, and sour cream on the side, garnished with chopped fresh parsley if you like.
