Most of the cost is eggs ($5.50) and vegetarian hard cheese (in place of parmigiano-reggiano) ($2.40). With oil, spices and staples already at home, the shop drops to about $8.31. Prices are estimated for the amount used, at average US grocery prices (November 2026).

Steps

  1. Crack the eggs into a large mixing bowl and beat them thoroughly with a fork or whisk until the whites and yolks are fully combined.
  2. Whisk in the finely grated vegetarian hard cheese, finely chopped parsley, salt, and black pepper until evenly distributed.
  3. Heat the olive oil in a 24 to 26 cm non-stick skillet over medium-low heat for 1 to 2 minutes until warm and shimmering, tilting the pan to coat the bottom and sides evenly.
  4. Pour in the egg mixture and cook gently over low heat, running a silicone spatula around the edges to let raw egg run underneath, until the base is set and lightly golden, about 8 to 10 minutes.
  5. Invert a flat plate or lid over the skillet, carefully invert the frittata onto it, slide it back into the pan raw-side down, and cook over low heat for 3 to 4 minutes until completely set and pale golden underneath.
  6. Slide the finished frittata onto a serving board or plate, let it rest for 3 to 5 minutes to firm up slightly, then slice into wedges and serve warm or at room temperature.
