Steps
- In a large bowl, combine the lime juice, minced garlic cloves, smoked paprika, ground cumin, half the salt, and half the black pepper. Add the pork ribs and rub the seasoning thoroughly into the meat on all sides.
- Cover the ribs and let them marinate in the refrigerator for 30 minutes.
- In a separate bowl, toss the cubed potatoes with the olive oil, remaining salt, and remaining black pepper until evenly coated.
- Preheat the air fryer to 200°C for 5 minutes.
- Spread the potatoes in an even layer across the base of the air fryer basket. Place the pork ribs on top and brush them generously with half of the barbecue sauce.
- Air fry at 200°C for 15 minutes, then turn the ribs over, brush with the remaining barbecue sauce, and cook for another 15 minutes until browned, tender, and an internal meat thermometer reads at least 71°C, with the potatoes golden and fork-tender.
- Transfer the ribs to a cutting board and allow them to rest for 5 minutes to retain their juices.
- Slice the pork ribs between the bones and serve hot alongside the roasted potatoes.
