Steps

  1. Preheat the oven to 400°F (200°C). Slice the chicken breasts horizontally into 4 even cutlets, pound them lightly between plastic wrap to an even 1/2-inch thickness, and season all over with the kosher salt and black pepper.
  2. Set up a dredging station in three shallow dishes: place the all-purpose flour in the first; beat the large eggs in the second; combine the plain breadcrumbs with half of the Parmesan cheese in the third.
  3. Coat each chicken cutlet first in the flour, shaking off excess, dip thoroughly in the beaten eggs, and press firmly into the breadcrumb mixture until completely coated.
  4. Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Pan-fry the chicken cutlets in batches for 2 to 3 minutes per side until golden brown and crispy, then transfer to a baking sheet or baking dish.
  5. Spoon the marinara sauce evenly over each cutlet, then top with the shredded mozzarella cheese and the remaining Parmesan cheese.
  6. Bake in the preheated oven for 12 to 15 minutes until the cheese is melted and bubbly and an instant-read thermometer inserted into the thickest part of the chicken reads at least 165°F (74°C).
  7. While the chicken bakes, bring a large pot of salted water to a boil, cook the spaghetti for 8 to 10 minutes until al dente, and drain.
  8. Portion the warm spaghetti onto 4 dinner plates, top each serving with a baked chicken cutlet, and serve immediately.
