Steps
- Combine the salt, black pepper, smoked paprika, and garlic powder in a small dish.
- Pat the chicken thighs dry with paper towels, then toss them in a bowl with 1 tablespoon of the olive oil and half of the spice blend.
- Toss the diced potatoes in a separate bowl with half a tablespoon of the olive oil and the remaining spice blend.
- Preheat the air fryer to 375°F (190°C) for 3 minutes, then place the seasoned potatoes into the bottom of the basket in an even layer.
- Lay the chicken thighs skin-side down over the potatoes and air-fry at 375°F (190°C) for 15 minutes.
- Toss the broccoli florets with the remaining half tablespoon of olive oil.
- Turn the chicken thighs skin-side up, shake the basket gently, and scatter the broccoli around the chicken. Air-fry at 375°F (190°C) for 10 to 12 minutes more until the chicken reaches 165°F (74°C) with no pink remaining and the potatoes are tender.
- Transfer the chicken to a plate and rest for 3 to 5 minutes so the juices settle.
- Divide the roasted potatoes and broccoli among 4 plates and serve alongside the rested chicken thighs.
